Kort sagt, mine vigtigste forskningsområder er: Udvikling og anvendelser af forskellige flydende og fast tilstands lavt og højt felts NMR-spektroskopi til undersøgelse af fødevaresystemer og i metabolomics. Især brugen af kvantitative NMR-spektroskopi til undersøgelser af fødevarerkvalitetsparametre ved brug af multivariant dataanalyse. Fødevaresystemerne omfatter pektiner / alginater, kulhydrater, lipider og fedtsyrer sammen med hele fødevarer som mælk, ost, yoghurt, korn, brød, juice og øl. Da NMR-spektroskopi har vist sig som en stærk ikke-invasiv teknik til både in vivo og metabolomic undersøgelser, er NMR-studier af levende biologisk væv og biovæsker inkluderet i mit arbejde. Jeg har deltaget i udviklingen af Institut for Fødevarevidenskabs metabolomics platform.
Ud over forskning og undervisning, har jeg arbejdet som viceinstitutleder for forskning og innovation ved Institut for Fødevarevidenskab siden 1. april, 2014 og som vice-direktør i afsnittet Spektroskopi & Chemometrics siden 1. februar 2009.
På nuværende tidspunkt optager dette de fleste af mine arbejdstimer. Jeg nyder, at være involveret i ledelsen af instituttet og sektionen, samt deltagelse i diskussionen om den strategiske udvikling af sektionen.
