WE’VE DISCOVERED THAT TO OVERCOME BARRIERS TO NEW FOODS, THERE HAS TO BE A BALANCE BETWEEN NOVELTY AND FAMILIARITY. ICE CREAM IS THE PERFECT GATEWAY FOOD BECAUSE IT’S SO COMFORTING, EVEN WITH A NOVEL FLAVOUR LIKE SEAWEED.
