Abstract
This paper is on the consumption of organic foods in Denmark in 1997/1998. First, we explain changes in organic food consumption, using the AIDS demand system. The analysis is based on four-weekly observations of household purchases.
The main results are that the consumption of organic food is very price sensitive, indicating that policy measures affecting price premiums will be highly effective.
