Sara Vincentzen Kondrup holds a Master of Business Administration and Philosophy at Copenhagen Business School and is currently a PhD Fellow at the Department of Food and Resource Economics. In her PhD project, she uses a prospective qualitative study design to explore the food practices of a group of flexitarians, vegetarians, and vegans in Denmark. The overall objective is to understand how and why animal product limiting appears, alters, and potentially disappears over time.
