The Nordic Food Lab Nordic Food Lab is a research center and culinary experimentation, non-profit organization that works at the University of Copenhagen. The NFL, founded in 2008 by René Redzepi, investigates food diversity and the potential of (good) taste of food, whether algae or insects, combining scientific and humanistic approaches to cooking techniques from around the world. Roberto Flore, coordinator of the NFL, and Josh Evans, head of research, studying the flavors that say something about us and establish a connection between the food we eat with a place and this time we live in.
