Jens Juul Holst forsker i appetitregulering og hormoner, der regulerer stofskiftet (fordøjelsen). Han leder en forskningsgruppe, der forsker i fedme og type 2 diabetes, især med henblik på opklaringen af hormonale forstyrrelser og mulighederne for behandling baseret på hormoner. Han har endvidere været med til at udvikle en lang række præparater til brug i behandlingen af type2-diabetes.
