"Small talk" - a new apporach to optimised cheese quality

    Abstract

    Aim

    The aim with this project is to achieve knowledge of how microbial communication (quorum sensing) influences growth of starter cultures and pathogenic bacteria e.g. Listeria monocytogenes. With time it may be expected that knowledge of how microorganisms communicate can be used actively to control the growth of both starter cultures and pathogenic bacteria.
